Carob cake is your healthy version of a fudge cake. Because it has this amazing fudge-like taste, even without the chocolate. You will love the texture and how perfect it is on its own. I know that instant pudding mix is quicker, but honestly I like to make pudding by cooking it. Having that warm smell and taste of fresh cooked pudding takes me back when I was little, as my daughter is now.
