Cookie And Coconut Balls
Ah Sunday afternoons you know what that means? Well here is a little hint…Cookies LOL and for some reason I keep doing this for past couple of months. LOL no wonder I’m overweight no no you didn’t just read that let’s put it this way I’m “Elegantly Chubby”. OK now this sounded ridiculous HAHAHA No I don’t eat my cookies, I mainly make them because it’s fun for little Princess and to make some peace in the house why not bake. But this recipe is especially dear to me because it’s so quick, easy, and best of all it does not require any baking
Of course if you involve your kids into baking the preparation time may take forever LOL
So here is a quick and easy recipe for:
Cookie and Coconut Balls
Ingredients:
-Honey Grahams Finely Ground (or any kind that you like-I use entire box-about 408g)
-Softened Butter (about 2 sticks-make sure it’s sweet or unsalted)
-Powdered Sugar (this usually go by taste-I put less than a cup)
-Vanilla Extract (now I use this instead of the Rum and about half a teaspoon, but even better option would be Vanilla Sugar)
-Coconut Flakes (now you can use chocolate flakes or anything you like)
Directions:
-In a large bowl combine ground Graham Cookies, sugar, Vanilla extract and softened butter. Everything needs to be smoothly mixed together and preferably by hand (it’s mixed more evenly).
-Taking small amounts make balls with your hands and roll them in the coconut or chocolate.
-Place in the refrigerator for an hour to cool and get tight.
